Christmas Mulled Wine

There is nothing quite like the warm feeling of mulled wine on a cold day during the Festive Holidays. This beautifully spiced infused wine is the perfect greeting at any Christmas party. Long as you use a good quality Red wine, it will serve you well.





Ingredients:


2 Clementines

1 Lemon

1 Lime

200g Caster Sugar

6 Whole Cloves

2 Cinnamon Sticks

2 Fresh Bay Leaves

1 Whole Nutmeg, for grating

1 Vanilla Pod

3 Star Anise

2 bottles of good quality Italian Red Wine


Method:


  1. Firstly, peel large sections of the Clementines, lemon and limes peel.

  2. Place the sugar in a large saucepan over a medium heat, then add the pieces of peel and squeeze in the clementines juice.

  3. Next add the cinnamon sticks, cloves, bay leaves and around 12 gratings of Nutmeg. Slice the vanilla pod in half lengthways and add to the saucepan. Now stir in just enough wine to cover the sugar.

  4. Simmer until the sugar has dissolved into the wine, then bring to the boil. Keep on a rolling boil for 5 minutes or until you have an awesome thick syrup. This will really enhance those stunning flavours and infuse the wine.

  5. When you have a syrup, reduce the heat to low and add the Star Anise' and the rest of the wine. Gently heat the wine for 5 minutes, until its warm, then pour into wine glasses. Place freshly sliced lemon, a Star Anise and a stick of cinnamon into each glass for decoration. Enjoy!
