Tiramasu has been one of my all time favourite desserts. With one bite I am transported back to Piazza Tasso Square in Sorrento. The Italian's call it Pick-Me-Up, due to the calories and caffeine in it. Maybe a little than often dessert, but it is so delicious. This is my recipe of the classic dish, try it, you will not be disappointed.
Serves 8
Ingredients:
2 Large Egg Yolks
2 tbsp Caster Sugar
2 tsps Vanilla Sugar
500g Mascarpone Cheese
350mls Strong Black Coffee ( I love to use Napoli from Nespresso)
2 tbsps Kahlua
20 Savoiardi Biscuits ( Lady Fingers)
2-4 tbsp Unsweetened Cocoa Powder
Method:
1. Place the egg yolks, sugar and vanilla sugar into a large bowl and mix together gently to a creamy consistency.
2. Then add the mascarpone and fold in, this will create the cream.
3. Pour the coffee into another bowl with the Kahlua liqueur. Then dip the biscuits for a second or two in the coffee mixture, so they absorb just enough to keep firm but not falling apart. We don't want a mushy mess.
4. Now arrange the biscuits into a casserole dish or eight individual dessert dishes alternating layers of biscuit and mascarpone. Now dust the tops with cocoa powder and put into the fridge to set and chill. Serve with an Espresso, bellissimo!
