1 Unwaxed Lemon


Glace Cherries

Bombay Sapphire Gin

1 Heaped Teaspoon Caster Sugar

100ml Soda Water


1. Start off by getting a tall glass filled with ice so it starts to frost up. I also like to keep the glass in the freezer before making the Tom Collins. Now get a cocktail stick and place a glace cherry and wedge of lemon on it.

2. Now using a cocktail shaker, pour 50ml of Bombay Saphire Gin, the juice of 1/2 lemon, 1 heaped tsp of caster sugar and 100ml of soda water. Shake hard with plenty of ice for 30 seconds, this makes it nice and cold. Strain over the ice in the prepared glass and top with the skewer. Delicious!
